Re-opened in February 2018 in a new location and with a new menu, noma quickly reclaimed the two Michelin stars it relinquished by temporarily closing down, and gained an extraordinary third star in 2021, plus the accolade of World's Best Restaurant in October of the same year. Superchef René Redzepi still runs the noma kitchen, drawing on experience at some of the best restaurants around the world. But noma is not about fusion food, it’s a New Nordic kitchen.

Previous Scandinavian delicacies at noma have included Icelandic seaweed, Faroese deep-sea fish, Greenlandic musk ox and sorrel from Danish forests. The chefs do all their own curing, smoking and pickling and are at the forefront of new techniques to combine and prepare ingredients in innovative ways. Tempted? Better go and get booking then!
