Danish produce

The Danish climate, the long and cool growing season, the Nordic light, and the mild climatic stress, which the Danish produce is exposed to, are all contributing factors in the produce obtaining the unique taste for which it is known.

After the design restaurants flirtation with "cross cuisine" over the past years, more and more restaurants now seek to create a national distinguishing feature in the food - and thereby define the new Scandinavian kitchen.

Organic produce

Denmark is considered a pioneering country with regard to organic farming - from the western part of Jutland where healthy marsh lamb have plenty of space to romp about, and the harsh wind from the North Sea provides the muscular meat with a lovely salty taste - to the rocky island of Bornholm which is known for its organic roosters. Fresh milk is provided by the numerous organic farms spread all over the country, and small dairies produce organic cheese and butter.
